Roasted potatoes with zaatar and a side of avocado dip.
Ingredients . 500g of Maris Piper potatoes, cut into wedges
. 2 tablespoons of zaatar spread
. 1 teaspoon sea salt
For the dip:
Step 1 Line a baking sheet with baking paper.
Step 2 Mix potatoes with zaatar/salt and toss to coat. Transfer potatoes to the prepared baking sheet.
Step 3 Set baking sheet on the lowest rack of a cold oven and heat the oven to 425 degrees F (220 degrees C). Roast until potatoes are golden brown and tender, 30 to 35 minutes, stirring halfway through.
For the dip just mash the avocado, add a squeeze of lime and a sprinkle of coriander.
